PENINGKATAN MUTU BUAH APEL SEPANJANG RANTAI PASOK DARI PASCAPANEN SAMPAI DISPLAY SUPER MARKET (QUALITY IMPROVEMENT OF APPLE FRUIT ALONG SUPPLY CHAIN: FROM POST-HARVEST UNTIL SUPER MARKET’S DISPLAY)

Kualitas penanganan buah apel sepanjang rantai pasok masih rendah, terdapat banyak kesalahan yang   menyebabkan mutu apel merosot. Perlu dilakukan perbaikan penanganan buah apel pasca-panen guna meningkatkan kualitas yang lebih baik. Dalam penelitian ini, akan dirancang sebuah quality plan untuk mengatasi permasalahan tersebut. Permasalahan yang terjadi disebabkan karena faktor manusia, peralatan, metode, dan lingkungan. Quality plan disusun sebagai pedoman dalam melakukan tindakan setiap proses pascapanen buah apel untuk mengatasi faktor-faktor yang menyebabkan buah apel tersebut mudah rusak. Quality plan dianalisis mulai dari proses sorting di kebun sampai dengan proses display buah apel di supermarket.

The handling qualities of apple fruit throughout its supply chain system is still considered low, as there are lots of faults took place during the process that led to the declining quality of the apples. It is recommended to plan a handling procedure of post- harvested apples in order to enhance a better quality. This study will try to design a quality plan to address those issues, using methods such as Pareto diagram, cause-and- effect diagram and double sampling plan. Problems that occurred are due to various factors, namely human error, machine fault, method and environment slip-ups, and so on. The quality plan is structured as principles of Malang Apple’s post-harvested procedure performance to overcome factors that can lead to defect in apples, and it has been analysed since the sorting process in apple farm until the displaying process in supermarket.
